
About the recipe
We make a Pizza with thin and crispy dough by adding BORAS smoked buffalo salami, mozzarella, olives, onion, tomato and herbs and the result will definitely drive young and old crazy!!!

Materials:
Ingredients for the dough
300 g hard flour (type 00)
100 g fine semolina
250ml lukewarm water
9 g instant dry yeast
1 tbsp sugar
1 tsp salt
1 tbsp olive oil
Ingredients for each pizza
150g. BORAS smoked buffalo salami, cut into thin slices
1 tbsp tomato paste (diluted with lukewarm water)
a clove of garlic
salt, pepper
1 small tomato, sliced
1 small onion, sliced
5 small black olives without pits
3-4 tbsp fresh basil leaves
1 large ball 190g fresh mozzarella, hand-cut
some fresh arugula for serving
Execution:
Prepare the homemade pizza dough:
In a bowl, mix the yeast with the lukewarm water and sugar and leave until the yeast has risen and activated. In another large bowl, pour the flour, semolina, salt and mix with a fork. Make a small mound with a gap in the middle and pour in the water with the yeast, mixing with a fork. As soon as it starts to stick, knead with your hands, adding the olive oil.
Knead in the bowl for five minutes until the dough becomes soft and elastic.
Let the dough "rest", covered with a clean cotton kitchen towel, at room temperature for approximately 2 hours until it doubles in size.
We prepare the pizza sauce:
In a bowl, mix the tomato paste with a little lukewarm water and add salt, pepper, oregano, a little sugar and the melted garlic.
After the dough has rested and risen, divide it into 2 equal balls, one for each pizza. On a floured surface of the counter, roll out the dough with your fingers starting from the center and pressing outwards, turning the dough in a circular motion. Place it in the special pizza pan (if you don't have one, you can put it in a circular pan) after adding a little semolina so that it slides when we put it in the oven and also so that it becomes crispier on its base.
On each pizza, spread the tomato sauce sparingly using a spoon, the mozzarella, the slices of BORAS Buffalo salami, the tomato and onion rings, the chopped fresh basil and the olives cut in half.
Baking:
Preheat the oven to 250°C. It should be at temperature 20-30 minutes before baking the pizzas.
For an authentic taste as if it was baked in a wood-fired oven, place an upside-down baking sheet on the base of the oven and once it is well heated, place your pizza there, making sure it is at a very high temperature.
Bake at maximum oven temperature for approximately 6-9 minutes (depending on the oven). Once it comes out of the oven, sprinkle some fresh basil and some fresh arugula on top, place the pizza on a piece of wood and cut it with the special wheel tool.
You can add a couple of drops of olive oil to each piece before enjoying it.
