
About the recipe
We made everyone's favorite peinirli and filled it with cooked Kerkini buffalo minced meat and mozzarella!!! The result will delight young and old and will become your favorite snack.

Materials:
1 package Kerkini buffalo minced meat – BORA
4 or 6 large pre-baked pie crusts
1 large onion
2 Ripe tomatoes
1 green bell pepper
1 bell pepper
2 chili peppers, medium spicy
1 clove of garlic
2 tbsp extra virgin olive oil
fresh mozzarella balls (1 in each penirli)
a little fresh butter
1 small glass of white wine
50 ml whole milk
Fresh parsley
thyme
Pepper
cumin
Salt
Execution:
In a preheated pan, add the olive oil, chopped onion and garlic, and the peppers and cover to caramelize over medium heat for about 15 minutes.
Then add the chopped tomatoes and the chili peppers, also chopped and without the seeds (if we want the filling to be spicier, add some), the thyme, chopped parsley and cumin.
Then add the Kerkini buffalo minced meat and make sure it “breaks” with a fork. Add salt and pepper. Deglaze with the wine and leave for a few minutes for the alcohol to evaporate.
Stir the mixture well, cover with a lid and cook over medium heat for about 20 minutes.
Then add the milk and stir over low heat and without a lid until the mixture absorbs all its liquids.
Turn off the heat and leave the minced meat to cool with the lid open.
Lightly butter the peinirli bases and then divide half of the mozzarella onto the base.
Add the mixture with the Kerkini buffalo minced meat and then top with the remaining mozzarella.
Bake in a preheated oven for approximately 15-20 minutes at 180 if it is fresh peinirli dough or for 10-15 minutes if it is pre-baked.
