
About the recipe
A very easy recipe for everyone with the unique smoked buffalo leg of Boras. You will find it in selected stores throughout Greece.

Materials:
250g smoked buffalo leg – BORAS
500g Farfalle
350g grated mozzarella
150g Gruyere cheese
2 cloves garlic
fresh basil
2 tbsp olive oil
100 g Butter
200ml. cream
2 large eggs
salt, pepper, nutmeg
Execution:
Preparation:
Boil the farfalle for the time indicated on the package. Reserve 2 glasses of the boiling water. Drain and set aside.
In the same pot, add the olive oil and sauté the chopped garlic with the basil. Add the smoked buffalo leg – BORAS, cut into cubes of about 1 cm (we have asked our grocer to cut it into slices of about 1 cm thick) and stir until golden brown.
Add the cream and the reserved pasta water. Stir over medium heat and add the pepper, nutmeg and a little salt. Add half the butter cubes to the pasta and turn off the heat.
Let the mixture cool a little and add the 2 eggs, after beating them well. Stir and once the mixture has cooled enough, add the mozzarella.
Place everything in a well-buttered baking pan and sprinkle the grated gruyere on top.
Baking:
Bake in a preheated oven for about 20 minutes at 180 degrees.
Let cool slightly and serve with some freshly chopped basil.
