A traditional Greek recipe that with Greek buffalo minced meat from Kerkini the taste took off

Materials:
500g buffalo minced meat from lapa
150g minced pork
1+1/2 cups of Carolina rice (for stuffing)
2 cloves garlic
50 g black raisins
1 large onion, grated
1 large carrot, grated
a few celery leaves, chopped
chopped parsley
olive oil 3/4 of a cup and a little more
sweet paprika
1 tbsp tomato paste
1 large ripe tomato, grated
salt, pepper
Execution:
In a large bowl, knead the minced meat and add the parsley, salt, pepper, sweet paprika, half the onion, grated carrot, raisins, one clove of chopped garlic, the rice and half the olive oil.
In a saucepan, sauté the remaining onion, one chopped garlic clove, and the celery leaves. Add the tomato paste, salt, and pepper.
Then we shape the yuvarlakia with a little water in our hand to soften the dough. We add them to the pot and add enough water to just cover them. Boil for about 20 minutes over medium heat and stir by shaking the pot lightly.
Then add the grated tomato and bake for another 40 minutes over low heat with the lid closed.
Add a little salt if needed and serve with a few chopped celery leaves.
