
About the recipe
We created an "intoxicating" recipe with Kerkini Buffalo meat that will give you a unique dish in aromas and flavors...

Materials:
1 package Kerkini Buffalo Meat BORAS (700-800gr) – shoulder or thigh
1/2 cup olive oil
2 onions
1 clove of garlic
1 large pepper (yellow or red)
1 large carrot
1/2 cup peas
1 tsp. sharp sweet paprika
1 tsp mustard
1 cup vegetable broth
2 glasses of white wine (retsina for a more intense flavor)
2 bay leaves
1 tsp. sugar
flour
thyme
oregano
salt, pepper
Execution:
Cut the Greek buffalo meat from Kerkini-Boras into small pieces, season with salt and pepper and flour it well. Pour the olive oil into a saucepan and sauté the meat on all sides over medium heat.
Once the meat is ready, remove it from the pot and add the onion, very finely chopped garlic, carrot and pepper cut into small pieces and sauté well.
Add the meat back to high heat and add salt, pepper, thyme and paprika. Mix well and deglaze with the wine and scrape the bottom of the pot with a wooden spoon.
Add the mustard. Mix well and once it boils, add the bay leaves and the vegetable broth. Wait for the alcohol to evaporate from the wine and lower the heat, covering the pot with a lid.
Simmer the meat for about an hour and a half over low heat with the lid closed, adding a little more broth from the vegetables halfway through if needed.
Once it absorbs its juices and thickens, our sauce is ready.
Finally, let our food rest for about 15 minutes on a closed stovetop and serve ideally with rice or French fries.
