
About the recipe
We created a recipe with the unique Kerkini Buffalo Kavourma that stands out for its taste and quality… Inside the peppers, along with anthotyro, gruyere and vegetables, they create a perfect combination and give us a unique appetizer. Of course… YOU CAN!!!

Materials:
1 package Kerkini buffalo Kavourma – BORA
1 fresh egg
1 large onion
4 large Florina peppers
1 clove of garlic
3 tbsp extra virgin olive oil
100 g anthotyro cheese
100 g grated sweet gruyere cheese
Fresh basil
Salt, Pepper
Execution:
Cut the peppers lengthwise (above the stem) and carefully remove the seeds and “veins” with a knife. Sprinkle them with a little olive oil and bake them with the opening facing down for about 5 minutes in a preheated oven on the grill. Let them cool thoroughly.
In a preheated pan, add the olive oil, the chopped onion and garlic, and the peppers (the caps that we removed from the peppers) chopped into small cubes and cover to caramelize over medium heat for about 15 minutes. Then add the Boras Buffalo Crab, after crushing it well with our hands. Sauté for a while and let the mixture cool.
In a bowl, pour the mixture with the Buffalo Kavourma and add the egg, the anthotyro in small pieces, the grated gruyere, a little salt, pepper and chopped basil. Mix the mixture well. Fill the peppers with a spoon, distributing the mixture evenly. Sprinkle with a little olive oil and bake in a preheated oven at 180 degrees for about 8-10 minutes.
Serve with a little freshly ground pepper and chopped basil.
