
About the recipe
A traditional favorite recipe along with the unique buffalo spicy sausages of Kerkini. The distinct flavor of the buffalo sausages makes this “humble” but very tasty dish a gastronomic delight… Of course…Boras!!!

Materials:
2 packages of Spicy Buffalo Sausages from Boras
6 large potatoes cut into large pieces
2 large cloves of garlic
2 large onions, grated or in a multi-cooker
2 green bell peppers, chopped
5 tbsp olive oil
500g grated tomatoes
1 tbsp tomato paste
1/2 glass of white wine
dried thyme
dried and fresh oregano
2 bay leaves
cumin
a little sugar
salt, pepper
Execution:
In a large and deep frying pan, add the olive oil and once it is hot, add the potatoes cut into large wedges and then in half. Sprinkle with a little dried oregano, thyme, salt, pepper, cumin and sauté well on all sides. Then add the onion on the grater first and leave it with the potatoes until it takes on color.
Add the chopped garlic and peppers and stir over high heat. Cut the spicy buffalo sausages and sauté them with the potatoes until they turn brown. Then add the tomato paste and mix the bottom of the pan well with a wooden spatula. Deglaze with the wine and once the alcohol has evaporated, add the grated tomatoes, sugar and bay leaves.
Mix well and close the lid and cook over medium heat for about 40 minutes without stirring until the potatoes are tender and the sauce has thickened.
Serve with a little fresh oregano and a little grated feta cheese on each plate…
