
About the recipe
We created a recipe with Kerkini Buffalo Burgers, whose distinctive flavor combined uniquely with eggplants and created a unique result.

Materials:
2 packages of BORAS Buffalo burgers
4 eggplants, cut into slices
3 cloves garlic
2 onions, chopped
fresh oregano or dried
olive oil
2 large potatoes, cut into slices
1 tbsp tomato paste
1kg sugar
3 ripe tomatoes, grated
200g feta cheese
100g dried sweet mizithra cheese
chopped parsley
chopped fennel
1kg sweet paprika
salt, pepper, thyme
Execution:
Defrost the BORAS Buffalo Burgers the night before in the refrigerator. Fry the potatoes and eggplants briefly and leave them on kitchen paper to absorb the oil.
In a frying pan, sauté the onions, adding the thyme, salt, pepper, paprika, chopped parsley, fennel and garlic.
Once they are golden brown, deglaze with half a glass of white wine and then once it has evaporated, add the tomato paste. Mix well and add the grated tomato. Let it boil for 5 minutes.
In a baking pan, add the olive oil and make sure it covers the entire surface, then first place the French fries slices, sprinkle with feta cheese and cover with some of the onion sauce that we have prepared.
Then we do the same with a layer of eggplants. We place the burgers on top and continue with a layer of potatoes and then eggplant. Finally, we cover with sauce, add the dried mizithra and the remaining feta. We bake in a moderate oven (180 to 200) for about 35 – 40 minutes.
Serve with a little chopped parsley and freshly ground pepper…
