
About the recipe
We made an easy recipe with spicy buffalo sausages from Kerkini and penne with tomato sauce... We added olives, bell peppers from Serres and herbs and the result was unique!!!

Materials:
4 BORAS spicy buffalo sausages (2 packages)
500 g penne
1 dried onion
2 large tomatoes, grated
6 bell peppers from Serres (slightly spicy)
8 pitted olives
2 cloves garlic, chopped
1 tsp smoked red pepper
1/4 cup Oil
1 glass of white wine
chopped parsley, spring onion
salt, pepper, thyme
Execution:
In a deep frying pan, add the olive oil and once it is hot, add the spicy buffalo sausages from Boras, cut into slices, along with the chopped onion. Sauté, stirring, then add a little parsley and garlic. Mix well and add 3 of the finely chopped bell peppers from Serres.
Then we put out with the wine. Once the alcohol has evaporated, we add the fresh tomato and a little salt (buffalo sausages also have it), pepper and smoked paprika. We let the sauce thicken for about 20 minutes over medium heat.
Boil the penne for 3 minutes less than the package says. Reserve half a cup of the water they were boiled in. Transfer the penne to the pot with the sauce with a slotted spoon and stir. Add the olives, the remaining peppers and the chopped spring onion, and a little of the water we reserved.
Over medium heat, let the penne cook with the sauce until they are well cooked but still a little crispy in the center. Serve with chopped parsley and freshly ground pepper. For a perfect result, grate a little feta cheese by hand on each serving!!!
